Barley has a low GI and wild rice has lots of fiber. This earthy, healthy home made warm cereal is easy to make on the weekend and store in the fridge. Heat and eat with a little milk and some fresh berries.

Ingredients
  • 1 cup pearl barley
  • 1/2 cup steel-cut oats
  • 1/2 cup wild rice
  • 1/2 cup chopped prunes, dates or figs
  • 1/2 cup raisins or sultanas
  • 1/4 cup chopped walnuts
  • 1/2 tsp ground cinnamon
  • a little salt

Directions
  1. Boil the wild rice in 2 cups of water for 20 min. Drain.
  2. In a baking dish, mix the wild rice with the remaining ingredients and 6 cups of water.
  3. Cover with foil and bake on 190C/375F until the liquid is absorbed and the grains are tender (about 1 1/2 hour). Stir every 20 min.
  4. Serve warm with milk.
  5. This recipe freezes well. Just divide it into portion sized batches and freeze. You can put it in your fridge the night before you plan on eating it and it will be thawed the next morning. You can also put it in the microwave oven for 4 or 5 mins on max effect.
