Ingredients
  • 1 fryer chicken-cut up
  • 1 large onion-quartered
  • 1/4 cup white vinegar
  • 1/4 cup vegetable oil
  • 3 tablespoons granulated sugar
  • 2 tablespoons paprika
  • 2 tablespoons dried thyme leaves-crumbled
  • 1 tablespoon cayenne pepper
  • 1 tablespoon salt-or taste
  • 2 teaspoons ground nutmeg
  • 1 1/2 teaspoons ground allspice

Directions
  1. In a blender or food processor,combine all ingredients except chicken.
  2. Process until blended and smooth.
  3. Pour marinade into large glass bowl or large resealable plastic bag.
  4. Add chicken pieces and toss to coat.
  5. Cover(or seal) and refrigerate at least 8 hours. Chicken can be marinaded up to 3 days.
  6. Preheat oven to 325 degrees.
  7. Place chicken pieces in a 9" x 13" baking dish.
  8. Bake uncovered for 90 minutes or until juices run clear and desired tenderness is reached.

  10. Marinade can be doubled or tripled for large amounts of chicken.

Going to have to try this. Though may have to add more cayenne or some habeneros to and more heat.


I'm with Volki on the heat. Looks yummy.


I love jerk, the flavors are so complex. Looks yummy and I might sneek that devilish habanero in there too. Just wear the gloves for goodness sake! Mo' hotter, mo' better.
