Ingredients
  • 1 lb Pork Shoulder - 0.5in cubes
  • 1 lb New Potatoe - or your favorite variety. 0.5in cubes
  • 1 lg White Onion - rough chop
  • 5 cloves Garlic - minced
  • 1/2 cup Roasted Medium Green Chiles (6-7 chiles to taste)
  • 12oz can Hatch Green Enchilada Sauce (Mild)
  • 7-8oz Mild or Medium, Red Mex Salsa (brand your choice)
  • 12oz Chicken Stock
  • 12oz Beef Broth
  • 1 Beef Boullion Cube
  • 1 tsp Black Pepper
  • 1 tsp Comino (Cumin)
  • 1 tsp Mexican Oregano
  • 2 Tbs Olive Oil

Directions
  1. Saute Onions and Garlic in olive oil until soft
  2. add Pepper, Comino, Oregano and Chiles. saute for 1 min.
  3. add Pork and saute until light brown and sealed
  4. add remaining ingredients
  5. simmer on low, covered for 1.5hrs
  6. your gonna like these flavors!
