How to make it

  • Preheat oven to 350 degrees. Greas a 5"x9" loaf pan and line the bottom with parchment paper. In a bowl,beat the sugar and lemon zest and sugar with wooden spoon till creamy;beat in the eggs Combine the flour,baking powder and salt in a bowl and add to butter mixture;stir in lemon juice and milk.. Mix in the almonds and raisins,reserving 1 Tbs of almonds for the top. Pour batter into prepared pan and sprinkle with reserved nuts. Bake 50 mins or till loaf is golden and a skewer inserted in center comes out clean. Let cool in pan 5 mins,then remove to a wire rack to cool completely.

    Incredibly easy to make. Slight modifications I made: 1 stick+ of butter instead 1 1/2; juice of one whole lemon; dry cherries infused in sherry instead of raisins; powdered sugar on top

    The lemon caught my attention and I will make this one soon. Good to have goodies like this in the freezer for a spur of the moment visitor.

    Sounds very tasty! Almond and lemon are always a great combo. I like the use of the whole wheat flour! Have you ever tried Prairie Gold? It's a white whole wheat. It has the characteristics of white flour but the health benefits of whole wheat. It's great to bake with! Great post.
