Lemon Almond Raisin Loaf

- 11/2 sticks(12Tbs.) unsalted butter,softened shopping list
- 1/2 c. sugar shopping list
- grated zest of 1 lemon shopping list
- 2 extra-large eggs ,beaten shopping list
- 2c. whole wheat flour shopping list
- 2tsp. baking powder shopping list
- pinch of salt shopping list
- juice of 1/2 lemon shopping list
- 1/2c milk shopping list
- 3/4c chopped or slivered almonds shopping list
- 2/3c golden raisins shopping list
How to make it
- Preheat oven to 350 degrees. Greas a 5"x9" loaf pan and line the bottom with parchment paper. In a bowl,beat the sugar and lemon zest and sugar with wooden spoon till creamy;beat in the eggs Combine the flour,baking powder and salt in a bowl and add to butter mixture;stir in lemon juice and milk.. Mix in the almonds and raisins,reserving 1 Tbs of almonds for the top. Pour batter into prepared pan and sprinkle with reserved nuts. Bake 50 mins or till loaf is golden and a skewer inserted in center comes out clean. Let cool in pan 5 mins,then remove to a wire rack to cool completely.
