Chocolate Cream From Scotlands Enchanted Castle

- 4 ounces chopped up dark chocolate shopping list
- 3 eggs - separated shopping list
- 2 oz sugar shopping list
- 4 fl. oz (heavy) double cream shopping list
- 1/2 tsp vanilla essence. shopping list
How to make it
- Melt the butter and chocolate in a pan over a low heat.
- Cook gently for 5 minutes until the butter and chocolate are melted, mixing well all the time.
- When melted, take the pan off the heat but continue to whisk the mixture thoroughly for a moment or two.
- Spoon the chocolate mixture to a bowl.
- Add the egg yolks and beat in thoroughly.
- Place the bowl in a refrigerator.
- Whisk the egg whites with half the sugar until they become stiff peaks.
- Whisk the cream with the remaining sugar and vanilla until it becomes soft peaks.
- Add a couple of spoonfuls of the whites into chocolate mixture, then gently fold in remaining whites.
- Add in the cream, and refrigerate until chilled.
- It can be served in individual glasses or in one larger serving dish.
- Decorate with fresh raspberries and mint (or cream and grated chocolate if you prefer.Or even white chocolate ribbons shaved from a white chocolate bar.
