Ingredients
  • 1 cup flour
  • 1/4 cup sugar
  • 4 tsp. baking powder
  • 3/4 tsp salt
  • 1 cup yellow cornmeal
  • 2 eggs
  • 1 cup milk
  • 1/4 cup vegetable oil

Directions
  1. *Sift together first four ingredients.
  2. Stir in cornmeal.
  3. In a separate bowl, beat liquid ingredients.
  4. Add liquid ingredients to flour mixture and stir just until moistened--even if it is still lumpy--don't over stir!
  5. Pour into a well greased 9x9 pan and bake at 425 for 20-25 minutes.
  6. Cut into squares and serve hot with butter, honey, and milk poured over top in a cereal bowl.
  7. ...Leftovers are good for a snack too, it's good a little stale :)
