Pumpkin Custard

- 2c. cooked pumpkin (canned is what we use) shopping list
- 11/2c. evaporated skim milk shopping list
- 2 eggs shopping list
- 3 egg whites shopping list
- 3/4c. pure maple syrup (or brown sugar) shopping list
- 1t. ground cinnamon shopping list
- 1/2t. nutmeg shopping list
- 1/2t. ground ginger shopping list
- 1/2t. mace shopping list
How to make it
- prepare 6 ramekins by coating with cooking spray
- Place cups in a shallow baking pan
- Whirl all ingredients in a blender till smooth
- Pour into ramekins
- Pour boiling water into baking pan half way up the ramekins
- Bake in a preheated oven at 350 degrees for 45 min or until a knife inserted in the center comes out clean
- Remove cups from pan, bring to room temperature and chill
- 152cal.
