Coconut Pecan Cake

- 4 eggs shopping list
- 3 cups sugar, divided shopping list
- 1 cup vegetable oil shopping list
- 3 tea. coconut extract, divided shopping list
- 3 cups flour shopping list
- 1/2 tea.baking powder shopping list
- 1/2 tea. salt shopping list
- 1 cup buttermilk shopping list
- 1 cup flaked coconut shopping list
- 1 cup chopped pecans shopping list
- 1/2 cup water shopping list
- 2 table. butter shopping list
- powdered sugar, optional shopping list
How to make it
- In mixing bowl, combine eggs, 2 cups sugar, oil and 2 tea. extract: mix well
- Combine flour, baking powder and salt
- add to egg mixturealternately with buttermilk:
- just until moistened
- Stir in coconut and pecans
- Spoon into a greased 10" fluted tube pan
- Bake at 350 for 60- 70 minutes or until a toothpick inserted near the center comes out clean.
- Meanwhile, in a saucepan, combine the water, butter, and remainingsugar.
- Bring to a boil and cook 5 more minutes
- Remove from heat and add remaining extract
- Slowly pour hot syrup over hot cake
- Cool in pan for 4 hours before putting it on a serving plate
- Sprinkle with powdered sugar if desired!!!
- ENJOY!!!!
