Irish Bacon And Cabbage Recipe
This is a traditional IRISH dish.. I love it sooooooo much!!

Ingredients
  • 1 Slab Bacon (1¼ - 2lb)
  • 1 green cabbage (or you could use ½ Green and ½ white cabbage)
  • 8 potatoes (peeled)
  • Salt and pepper

Directions
  1. Remove slab bacon from plastic bag.
  2. Cover with cold water. (you can slice the bacon before you put into the water, I find this easier for serving.
  3. Bring to boil and drain.
  4. Cover with fresh cold water. Bring to boil and then simmer for 25 minutes per 1lb plus 25 minutes over.
  5. Remove outer leaves of cabbage. Cut in half, add to the saucepan and simmer for the last 20 minutes.
  6. Remove bacon to chopping board and carve into thin slices(if you have not done so already). Drain cabbage, season with salt & pepper, chop and add a knob of butter.
  7. Serve the bacon with the cabbage and boiled potatoes as well as your choice of sauce, Parsley or bread sauce is really nice! :)

This is good stuff, That we can only have occasionally,Need to lower husbands tryglicerides, but Thank you for sharing it. I love the colcannon potatoes. Can you share your recipe forbread sauce? I've never heard of it. Thank you.
