Never was much of a fan of black beans til I tried this recipe. Made it for hubby cause he is a fan, ended up loving it myself. Do need to keep an eye after adding the beans. First time I made this was a complete mess. But tried again and was delic... More

Ingredients
- 1 cup onions, diced
- 4 cloves of garlic, finely chopped
- 2 jalapeno peppers, seeded and chopped
- 1 tbsp EVOO
- 1/2 cup ketchup
- 1/4 cup molasses
- 1/2 cup dark rum
- 1/4 cup mustard
- 2 tbsp brown sugar
- 2 tbsp Worcestershire sauce
- 1 tbsp hot sauce
- 1/2 tsp ginger
- 3 (15 ounce) cans black beans, drained
Directions
- Heat tbsp of olive oil in large pan.
- Add onion, garlic, and jalapenos to pan.
- Cook five minutes or until onions are tender.
- Stir in ketchup and remaining ingredients except beans.
- Bring to a boil.
- Reduce heat and simmer 5 minutes, stirring occasionally.
- Stir in the beans, and simmer for 1 hour over very low heat stirring occasionally.
- Watch carefully so beans don't stick to the pan.
- Can also add a bit of smoked sausage with the beans.

Absolutely love black beans and this combination sounds wonderful. Since I'm always broke, beans are a good thing to keep around. This will be a great change of pace for the family and it will keep the whining down to a minimum...not the same old black beans AGAIN. Thanks for the post.
