BBQ Black Beans with Rum

- 1 cup onions, diced shopping list
- 4 cloves of garlic, finely chopped shopping list
- 2 jalapeno peppers, seeded and chopped shopping list
- 1 tbsp EVOO shopping list
- 1/2 cup ketchup shopping list
- 1/4 cup molasses shopping list
- 1/2 cup dark rum shopping list
- 1/4 cup mustard shopping list
- 2 tbsp brown sugar shopping list
- 2 tbsp worcestershire sauce shopping list
- 1 tbsp hot sauce shopping list
- 1/2 tsp ginger shopping list
- 3 (15 ounce) cans black beans, drained shopping list
How to make it
- Heat tbsp of olive oil in large pan.
- Add onion, garlic, and jalapenos to pan.
- Cook five minutes or until onions are tender.
- Stir in ketchup and remaining ingredients except beans.
- Bring to a boil.
- Reduce heat and simmer 5 minutes, stirring occasionally.
- Stir in the beans, and simmer for 1 hour over very low heat stirring occasionally.
- Watch carefully so beans don't stick to the pan.
- Can also add a bit of smoked sausage with the beans.

absolutely love black beans and this combination sounds wonderful. Since I'm always broke, beans are a good thing to keep around. This will be a great change of pace for the family and it will keep the whining down to a minimum...not the same old...more
