High Temperature Roast W Horseradish Sauce Recipe

Ingredients
  • 2 1/4 lb beef eye roast (you can go bigger or smaller, but adjust cooking time)
  • seasonings (I use garlic powder and fresh ground black pepper)
  • Sour cream
  • Prepared horseradish

Directions
  1. Heat up oven to 500F for 20 minutes.
  2. Mix sour cream and prepared horseradish to your taste...I used about 1/2 cup sour cream to a heaping Tsbp of horseradish-refridgerate.
  3. Season your roast and place in pan (I used a cooking stone) fat side up.
  4. Put in oven and turn down to 475F.
  5. Cook for 7 minutes per pound.
  6. Turn off oven and leave the roast in there for 20 minutes per pound.
  7. Take out and let rest for 20 minutes.
  8. Slice and serve with sauce.

Yummy, very nicely cooked. If you had meat gravy and yorkshire pudding this would be the typical british 'sunday roast' - we love our roast beef and horseradish! :)

Ummm...I love roast and horseradish and this sounds like a really good way to fix it! I've never tried the cook-it-quick and turn off the oven thing before. I'll definitely give this one a try.
