Ingredients
  • 1 tablespoon olive oil
  • 1/4 cup chopped onion
  • 1 close garlic, minced
  • 1 cup prepared green salsa
  • 3/4 cup white wine
  • 1 tablespoon lemon juice
  • 12 ounces medium raw shrimp, peeled
  • 4 cups hot cooked rice

Directions
  1. Heat large nonstick skillet over medium high heat; add oil and heat until hot. Add onion; cook and stir until onion is translucent.
  2. Add garlic; cook and stir 1 minute. Add salsa, wine and lemon juice; bring to a boil. Reduce heat to medium low; simmer 10 minutes.
  3. Add shrimp; cook about 2 minutes or until shrimp turn pink and opaque, stirring occasionally. Serve shrimp mixture over rice.
