  • 6 ounces fresh spinach, broken
  • 1/2 large onion, chopped
  • 1 cup fresh mushrooms, chopped
  • 1 garlic clove, minced
  • 1 Tablespoon olive oil
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 6 chicken breast halves, boneless and skinless
  • 3/4 cup dry breadcrumbs
  • 3-4 Tablespoons grated parmesan cheese
  • 1 teaspoon paprika
  • 1 Tablespoon parsley
  • 1 egg
  • 1 Tablespoon water
  • 2-3 Tablespoons butter, melted
  • Parsley for garnish

Directions
  1. In a large skillet, cook spinach in water for approximately 2-3 minutes or until wilted.
  2. Drain well and set aside.
  3. In the same skillet, saute onions, mushrooms, and garlic in oil for approximately1 minute.
  4. Stir in the seasonings and spinach and set aside.
  5. *I sometimes like to add some Feta cheese to this mixture.
  6. Flatten chicken.
  7. Spread spinach mixture down center of chicken breasts.
  8. Roll up tightly and secure with a toothpick or skewer.
  9. Mix crumbs, cheese, and paprika.
  10. Beat egg with water.
  11. Dip each roll in egg, then crumbs.
  12. Place, seam side down, in 13 x 9 baking pan coated with cooking spray.
  13. Drizzle with butter.
  14. Bake, uncovered, at 350 degrees for 30 minutes.
  15. Serves 4-6
