Mama Dips Sweet Potato Pie

I did not have time to make my sweet potato pies during the holiday's. Luckily sweet potatoes last forever. Made pie last night , and it was the best sweet potato pie I've ever had. Recipe from Mama Dip's Kitchen.
Ingredients
- 1 1/2 pounds sweet potatoes (I used 2 large) shopping list
- 1 1/2 sticks butter or margarine, softened shopping list
- 2 cups sugar shopping list
- 3 eggs beaten shopping list
- 1/2 teaspoon ginger shopping list
- 1/2 teaspoon nutmeg shopping list
- 1/2 teaspoon ground cloves shopping list
- pinch salt shopping list
- 1 teaspoon vanilla extract shopping list
- 1/2 cup milk shopping list
- 1 unbaked 9-inch pie shell (I had enough batter for two pies) shopping list
How to make it
- Wash the sweet potatoes and place them in a pot, covered with water. Bring to boil. When the potatoes are soft (after about 45 minutes), drain, cool, and peel. Using a fork or potato masher, mash the potatoes in a large bowl along with the butter and sugar, combining well. Add the eggs. Stir in the spices, vanilla, and milk. Pour into the pie shell. Bake in a 375 degree oven for 45 minutes or until the center is firm.

I've eaten at Mama Dip's restaurant many times. Her sweet potato pie is incredible. Will definitely try this. :)
