Ingredients
  • 4 thick slices whole wheat bread
  • 6 T light brown sugar
  • 1 tsp grated lemon zest
  • 2 tsp lemon juice
  • 3 Cups sliced or diced hulled strawberries
  • 4 T mascarpone (Italian cream cheese)

Directions
  1. Toast bread in a toaster
  2. Meanwhile, heat a large skillet over high heat. Add sugar, lemon zest, and lemon juice and cook, stirring until the sugar melts and the mixture begins to bubble, 30 seconds to 1 minute. Add strawberries and stir until juices begin t o exude and the berries are heated through, 30 seconds to 1 minute more.
  3. Spread 1 T mascarpone on each slice of toast. Top with the warm berries.

Good morning Marcia, already have breakfast with your Strawberry Bruschetta as I told you yesterday and it was DELICIOUS, and so easy to make... the mixture of the strawberries was so good, it is almost like instant homemade marmalade¡¡ and the contrast with the cool Mascarpone has become a perfect marriage.

This looks simple to make and hard not to adore! I often eat very no-frill-y breakfasts because a lot of elaborate preparation is hard for me when I've just woken up. However, I think I can handle this, and better yet, I think my picky husband will like it too! Thank you for sharing this one.
