Yankee Pot roast or Boiled Dinner

- 4 lb. beef shoulder roast or some other beef roast shopping list
- 8 medium potatoes peeled and left whole shopping list
- 1 lb. baby carrots shopping list
- 2 large white onions quartered shopping list
- 1 tbs minced garlic shopping list
- 1 tbs. basil flakes shopping list
- 2 tbs. parsley flakes shopping list
- good quality beef base (Better than boulion is a good one) shopping list
- 1 large head cabbage cut into 8 wedges shopping list
- 2 tbs olive oil shopping list
How to make it
- Brown roast on all sides in olive oil. Place in large soup kettle or Dutch oven. Cover with water. Add beef base to taste. Place potatoes around roast. Place onions amongst the potatoes. Put carrots on top of this and sprinkle with the herbs and garlic. Make sure every thing is covered with the water. Gently cook about 1 1/2 hours. Add cabbage wedges and continue cooking for 30 minutes or untill cabbage is cooked and every thing is tender. Serve in large soup bowls with plenty of crusty bread and butter.
