Yankee Pot Roast Or Boiled Dinner Recipe
This is a delicious combination of wonderful down home flavors. It is a wonderful cold weather meal and sure makes every one in my house smile. It also looks really pretty.

Ingredients
  • 4 lb. beef shoulder roast or some other beef roast
  • 8 medium potatoes peeled and left whole
  • 1 lb. baby carrots
  • 2 large white onions quartered
  • 1 tbs minced garlic
  • 1 tbs. basil flakes
  • 2 tbs. parsley flakes
  • good quality beef base (Better than boulion is a good one)
  • 1 large head cabbage cut into 8 wedges
  • 2 tbs olive oil

Directions
  1. Brown roast on all sides in olive oil. Place in large soup kettle or Dutch oven. Cover with water. Add beef base to taste. Place potatoes around roast. Place onions amongst the potatoes. Put carrots on top of this and sprinkle with the herbs and garlic. Make sure every thing is covered with the water. Gently cook about 1 1/2 hours. Add cabbage wedges and continue cooking for 30 minutes or untill cabbage is cooked and every thing is tender. Serve in large soup bowls with plenty of crusty bread and butter.
