How to make it

  • Brown roast on all sides in olive oil. Place in large soup kettle or Dutch oven. Cover with water. Add beef base to taste. Place potatoes around roast. Place onions amongst the potatoes. Put carrots on top of this and sprinkle with the herbs and garlic. Make sure every thing is covered with the water. Gently cook about 1 1/2 hours. Add cabbage wedges and continue cooking for 30 minutes or untill cabbage is cooked and every thing is tender. Serve in large soup bowls with plenty of crusty bread and butter.

    I like it already. Out here the local beef is 110% range beef and saying its a bit tough is a kindness. I think I'll cook the roast solo for an hour or so before I add the veggies and a dollop of red wine. Be cooking it tomorrow and thanks.
