Mamaws Scalloped Corn Recipe
This dish puts some Southern flare into the meal. My grandma used to make this and it goes with anything you serve.

Ingredients
  • 4 cups fresh or frozen corn
  • 3 eggs beaten
  • 1 cup milk
  • 1 cup crushed crackers, (approx 30 saltines), divided
  • 3 Tblsp. Butter or margarine, melted
  • 1 Tblsp. Sugar (or you can use artificial sweetner)
  • 1 Tblsp. finely chopped onion
  • salt and pepper to taste

Directions
  1. In a large bowl combine corn, eggs, milk, 3/4 cup of the crackers, butter,
  2. sugar, onion, salt and pepper.
  3. Transfer to a greased 1 1/2 quart baking dish.
  4. Sprinkle the top with the remianing crackers.
  5. Bake uncovered for 1 hour at 325 degrees or until done.
  6. If you put a knife in the middle of it and it comes out clean, it's done.

My friend always makes a corn dish with crackers. I'll bet this is similar to her recipe. She wouldn't share the recipe with us so thank you for posting it here!
