Szechuan Noodles

- 6 garlic cloves, chopped shopping list
- ¼ cup fresh ginger, peeled and chopped shopping list
- ½ cup oil shopping list
- ½ cup tahini (sesame paste) shopping list
- ½ cup smooth peanut butter shopping list
- ½ cup soy sauce shopping list
- ¼ cup dry sherry shopping list
- ¼ cup sherry vinegar shopping list
- ¼ cup honey shopping list
- ½ tsp hot chili oil shopping list
- 2 Tb dark sesame oil shopping list
- ½ tsp pepper shopping list
- 1/8 tsp ground cayenne pepper shopping list
- 1 pound spaghetti shopping list
- 1 red bell pepper, julienned shopping list
- 1 yellow bell pepper, julienned shopping list
- 4 scallions (white and green parts), sliced shopping list
How to make it
- Place the garlic and ginger in a food processor; add the oil, peanut butter, soy sauce, sherry, sherry vinegar, honey, chili oil, sesame oil, and ground peppers and puree the sauce. Add a splash of oil to a large pot of boiling water and cook the spaghetti al dente. Drain the pasta in a colander, place it in a large bowl, and while still warm, toss with ¾ of the sauce. Add the red and yellow bell peppers and scallions; toss well. Serve warm or at room temp. The remaining sauce may be added, as needed, to moisten the pasta or serve with grilled chicken on the side.
