How to make it

  • Beat the egg white in a bowl until stiff and set aside.
  • Mix together the dry ingredients and set aside.
  • Combine the egg yolk, coconut cream and butter.
  • Add the egg mixture to the dry ingredients and mix until just blended.
  • Add the chocolate chips and fold in with the beaten egg white until just blended.
  • Don't overbeat the batter.
  • Follow the directions for your waffle maker.
  • In the case of my waffle maker the waffles were done in a minutes time.
  • The recipe makes 6 waffles.
  • If you don't have a waffle maker you could also use this batter to make pancakes.
  • Highly recommend adding sliced bananas or strawberries to the top with warmed up maple syrup.

    Debra - this recipe actually tempts me to buy a waffle iron despite being on a no - new -kitchen -toys policy currently. We love coconut + chocolate.
