Spicy Pinto Beans

- 2 – 20 oz cans of Whole pinto beans (drained) shopping list
- Low sodium chicken stock (enough to cover beans) shopping list
- 3 tablespoons extra-virgin olive oil shopping list
- 1/2 medium onion, diced shopping list
- 1 jalapeno pepper, chopped shopping list
- 2 cloves garlic, chopped shopping list
- 1 bay leaf shopping list
- kosher salt and freshly ground black pepper (to taste) shopping list
How to make it
- Heat olive oil in a medium saucepan over medium high heat
- Add the onion, jalapeno pepper, garlic, and bay leaf and cook until the vegetables begin to soften, about 5 minutes
- Add the beans and cover with chicken stock
- Bring to a boil, reduce the heat, cover, and simmer for 30 minutes to an hour
- Remove the bay leaf and discard
- Adjust seasoning with salt and pepper
