Balsamic Chicken With Thyme Recipe
Nice top of the stove chicken dish. Sauce good on rice or potatoes

Ingredients
  • 1/4c flour
  • 3/4tsp. each salt and pepper
  • 4 boneless,skinless chicken breast halves.
  • 2Tbs olive oil
  • 1 lg. red onion,cut in half lengthwise,thinly sliced(2 cups.)
  • 1 cup chicken broth
  • 2 Tbs. balsamic vinegar
  • 2tsp. fresh thyme leaves or 1/2tsp. dried

Directions
  1. Mix flour and 1/2 tsp. each salt and pepper on a plate. Add chicken;turn to coat. Shake off excess.
  2. Heat oil in a lg. cast-iron or heavy skillet over medium heat. Add chicken and cook,turning once,10 mins or till browned and cooked through.. Remove to a plate,keep warm
  3. Add onion to skillet and saute 1to 2 mins until lightly browned. Add broth,vinegar,thyme and remaining 1/4 tsp each salt and pepper. Bring to a boil and cook,stirring often,7 mins or until onions are soft and sauce is syrupy. Spoon over chicken.
