Zucchini Bars With Spice Frosting Recipe
A super easy and moist cake. Taken from, Betty Crocker's Best of Baking.

Ingredients
  • Zucchini Bars:
  • 2/3 C packed Brown Sugar
  • 1/4 C Margarine or Butter, softened
  • 1 Egg
  • 1/2 tsp. Vanilla
  • 1 C all-purpose Flour
  • 1 tsp. Baking Soda
  • 1/2 tsp. ground Cinnamon
  • 1/2 ground Cloves
  • 1 C shredded Zucchini, drained
  • 1/2 C chopped Nuts
  • Spice Frosting:
  • 3/4 C Powdered Sugar
  • 1 tbl. Margarine or Butter, softened
  • 3 to 4 Tbl. Milk
  • 1/8 tsp. ground Cloves

Directions
  1. Heat oven to 350 degrees.
  2. Grease square pan, 8X8X2-inches or 9X9X2-inches.
  3. Mix brown sugar, margarine, egg and vanilla in large bowl.
  4. Stir in flour, baking soda, cinnamon and cloves.
  5. Stir in zucchini and nuts.
  6. Spread batter in pan.
  7. Bake 25 to 30 minutes or until toothpick inserted in center comes out clean.
  8. Cool completely.
  9. Prepare Spice Frosting and spread on bars.
  10. Spice Frosting:
  11. Mix all ingredients until smooth and of spreading consistency.

I am usually not too hot about sweets but occasionally one calls my name and this is one. i can hardly wait.


Love zucchini however have not tasted it in a cake will try soon it gets my "5"
