SPINACH AND MUSHROOM SALAD

- SALAD shopping list
- 5 -6 baby spinach leaves, rinsed shopping list
- 125 g mushrooms, sliced shopping list
- 4 - 5 spring onions shopping list
- 1 Small red pepper, sliced into julienne strips shopping list
- 1/2 Punnet beansprouts shopping list
- 100 g feta cheese, cubed shopping list
- DRESSING shopping list
- 100 ml extra virgin olive oil shopping list
- 30 ml lemon juice (freshly squeezed) shopping list
- 15 ml wine vinegar (I prefer rice wine vinegar) shopping list
- 1 ml brown sugar shopping list
- 2.5 ml Crushed garlic shopping list
- 5 ml Origanum shopping list
- salt and freshly ground black peper shopping list
How to make it
- SALAD
- Remove the stems of the spinach leaves and chop if you like I leave them whole or just rip them
- Combine the spinach, mushroom, red pepper, beansprouts and spring onion.
- Pour salad dressing over and top with feta cheese just before serving.
- DRESSING
- Place all the ingredients in a jar and mix well, keep until ready to serve
