How to make it

  • Wash the rice in several changes of water.
  • Have the water boiling in a saucepan and add the rice.
  • Cook for 35 minutes, or until extremely soft.
  • Force the rice and liquid through a sieve, or puree in a blender. Combine the sugar, orange juice, lemon juice, and pineapple juice in a saucepan.
  • Cook until syrupy, about 10 minutes.
  • Add the strained rice, pineapple cubes, cinnamon, cloves, and orange peel.
  • Bring to a boil.
  • Remove the cloves.
  • Chill and serve very cold, garnished with additional fresh pineapple or other fresh fruit.
