How to make it

  • Add butter to boiling water; heat until butter melts. Add flour and salt all at once, stirring vigorously. Cook, stirring until mixture leaves side of pan.
  • Remove and cool 1 minute.
  • Add eggs, unbeaten, one at a time, beating with a spoon after each addition until smooth.
  • Drop by Tablespoon a full 2 inches apart on greased baking sheet shaping with a spoon into rounds with a peak on top.
  • Bake at 450 degrees for 10 minutes, then 400 degrees for 25 minutes.
  • Cool. Cut a slit in one side and fill with your favorite cream filling or whipped cream. Dust with powdered sugar or can be served with butter-scotch, fudge, or fruit topping.

    Oh I remember when mom made these, she put whipped cream and fresh strawberries in them for the filling, sprinkled powdered sugar on the top of the puff. Sooooooooo very very good, great post, thanks for the memories. You have my 5
