Quick and easy chops with a nice citrus twist. Serve with some rice and sprouts for a nice meal. From Southern Living annual cookbook.

Ingredients
  • 2 Tbsp sugar
  • 2 Tbsp cornstarch
  • 1/8 tsp ground allspice
  • 1 cup water
  • 1/4 cup orange juice
  • 1/4 cup raisins or currants (I used the golden raisins)
  • 1/4 cup ap flour
  • 1/2 tsp salt
  • 1/4 tsp fresh ground pepper
  • 4 one inch thick pork chops
  • 1 Tbsp shortening (I used light olive oil)
  • 4 orange slices

Directions
  1. Combine sugar, cornstarch, and allspice in a small saucepan, add water and cook over low heat, stirring constantly, until mixture thickens.
  2. Stir in juice and raisins, remove from heat and set aside.
  3. Combine flour, salt, and pepper.
  4. Heat shortening or light oil over medium high heat. Dredge chops in flour mixture, then brown chops quickly on both sides .
  5. Pour mixture over chops, cover, reduce heat and simmer 45 minutes or until chops are tender.
  6. Top with orange slices.
