Oven Apple Pancakes with Cider Sauce

- 1 1/2 cups flour shopping list
- 1/2 cup sugar shopping list
- 4 eggs shopping list
- 2 1/2 cups milk shopping list
- Put all ingredients in blender and whirl until smooth. shopping list
- Preheat oven to 425. Preheat 6 6" cast iron skillets in hot oven for 3 minutes. shopping list
- Remove and spray with Pam. Divide batter among 6 skillets and bake for 20 minutes. shopping list
- Remove pancakes from skillet, top with apples and cider sauce. Serves 6. shopping list

- Melt one tablespoon of butter in a skillet. Peel and slice 4 apples. Fry apples in butter, adding brown sugar, cloves and cinnamon to taste. shopping list
How to make it
- Cider Sauce:
- 1 cup sugar
- 2 tablespoons cornstarch
- 1/2 teaspoon pumpkin pie spice
- 2 cups apple cider
- 2 tablespoons lemon juice
- 1/4 cup butter
- Mix sugar, cornstarch and pie spice in a saucepan. Stir in cider and lemon juice. Cook, stirring constantly, until thickens and boils. Boil and stir for 2 minutes, remove from heat and add butter.
