Sausage Pie Recipe

Ingredients

1 1/2 pounds bulk Pork Sausage

1 medium Onion, chopped (about 1/2 cup)

1 Tbl. Sugar

1 1/2 tsp. Salt

1 medium head Cabbage (1 3/4 pounds), cut into large chunks and cored

1 can (16 ounces) Whole Tomatoes, undrained

2 Tbl. all-purpose Flour

1/4 C cold Water

Pastry for 9-inch One Crust Pie (below)

One-Crust Pie Pastry:

1/3 C plus 1 Tbl. shortening

1 C all-purpose Flour

1/2 tsp. Salt

2 to 3 Tbl. cold Water

Cut shortening into flour and salt until particles are sizes of small peas.

Sprinkle in water, 1 Tbl. at a time, tossing with fork until all flour is moistened and pastry almost cleans side of bowl. (1 to 2 tsp. water can be added in necessary.)

Directions

Cook and stir sausage and onion in Dutch oven until sausage is done; drain.

Stir in sugar, salt, cabbage, and tomatoes. Heat to boiling; reduce heat. Cover and simmer 10 minutes.

Heat oven to 400 degrees.

Prepare Pastry; shape into flattened round on lightly floured cloth-covered board. Roll to fit top of 2-quart casserole. Fold into fourths; cut slits so steam can escape.

Mix flour and water; stir into hot sausage mixture.

Pour into ungreased casserole.

Place pastry over top and unfold; seal pastry to edge of casserole.

Bake until crust is brown, 25 to 30 minutes.
