Sausage Pie Recipe
I love the combination of the cabbage, tomatoes and sausage in this pie. It's so good! Betty Crocker's Best of Baking.

Ingredients
  • 1 1/2 pounds bulk Pork Sausage
  • 1 medium Onion, chopped (about 1/2 cup)
  • 1 Tbl. Sugar
  • 1 1/2 tsp. Salt
  • 1 medium head Cabbage (1 3/4 pounds), cut into large chunks and cored
  • 1 can (16 ounces) Whole Tomatoes, undrained
  • 2 Tbl. all-purpose Flour
  • 1/4 C cold Water
  • Pastry for 9-inch One Crust Pie (below)
  • One-Crust Pie Pastry:
  • 1/3 C plus 1 Tbl. shortening
  • 1 C all-purpose Flour
  • 1/2 tsp. Salt
  • 2 to 3 Tbl. cold Water
  • Cut shortening into flour and salt until particles are sizes of small peas.
  • Sprinkle in water, 1 Tbl. at a time, tossing with fork until all flour is moistened and pastry almost cleans side of bowl. (1 to 2 tsp. water can be added in necessary.)

Directions
  1. Cook and stir sausage and onion in Dutch oven until sausage is done; drain.
  2. Stir in sugar, salt, cabbage, and tomatoes. Heat to boiling; reduce heat. Cover and simmer 10 minutes.
  3. Heat oven to 400 degrees.
  4. Prepare Pastry; shape into flattened round on lightly floured cloth-covered board. Roll to fit top of 2-quart casserole. Fold into fourths; cut slits so steam can escape.
  5. Mix flour and water; stir into hot sausage mixture.
  6. Pour into ungreased casserole.
  7. Place pastry over top and unfold; seal pastry to edge of casserole.
  8. Bake until crust is brown, 25 to 30 minutes.
