Weeknight Chicken Florentine

- 10 oz. pkg frozen cut leaf spinach shopping list
- 3 Tbl butter shopping list
- 2 skinless chicken breasts, pounded to 1/4”thickness shopping list
- 1/3 Cup bread crumbs shopping list
- ¼ tsp basil shopping list
- 2 Tbl oil shopping list
- 2 oz. shredded mozzarella shopping list
How to make it
- Cook spinach as directed; squeeze dry
- Stir in butter; set aside
- In small bowl combine basil and crumbs
- Coat chicken
- Heat oil over medium in large skillet
- Cook 5 to 7 minutes on each side or until no longer pink
- Reduce heat. Spoon cooked spinach evenly over chicken
- Sprinkle with cheese
- Cover; cook until cheese is melted
