Weeknight Chicken Florentine Recipe
This is a healthy flavorful return for very little effort. Serve with instant potatoes.....you're done! Easy to double or triple. Plan ahead and have the spinach and chicken prepped the night before. Recipe is handed down

Ingredients
  • 10 oz. pkg frozen cut leaf spinach
  • 3 Tbl butter
  • 2 skinless chicken breasts, pounded to 1/4”thickness
  • 1/3 Cup bread crumbs
  • ¼ tsp basil
  • 2 Tbl oil
  • 2 oz. shredded mozzarella

Directions
  1. Cook spinach as directed; squeeze dry
  2. Stir in butter; set aside
  3. In small bowl combine basil and crumbs
  4. Coat chicken
  5. Heat oil over medium in large skillet
  6. Cook 5 to 7 minutes on each side or until no longer pink
  7. Reduce heat. Spoon cooked spinach evenly over chicken
  8. Sprinkle with cheese
  9. Cover; cook until cheese is melted
