Kraft Blueberry Lemon Sparkle Recipe
Krumkake asked me to dig out some of these old Kraft phamplets and put in a few recipes from them.. this one is dated from the Summer of 72 one..... Im telling my age here...

Ingredients
  • 1 8oz cream cheese, softened
  • 1/2 cup sugar
  • 1 tablespoon lemon juice
  • 2 teaspoons grated lemon zest
  • 1/2 cup shredded coconut
  • 1 cup heavy cream, whipped
  • 1 pt fresh blueberries

Directions
  1. Combine softened cream cheese, sugar, lemon juice and zest, mixing until well blended.
  2. Spread mixture onto bottom and sides of a 9 inch pie plate.
  3. Freeze.
  4. Just before serving, fill center with blueberries.
  5. 6 to 8 servings.
  6. I think this could also be put in a graham cracker crust as well.
