How to make it

  • In a large, deep skillet or a Dutch oven, heat 2 Tbsp olive oil.
  • Season the rabbit pieces with salt and pepper.
  • Brown the rabbit in batches, adding 1 Tbsp of additional oil as necessary. Remove the pieces to a plate as the rabbit is browned.
  • Slice garlic. Saute with rosemary in 1 Tbsp olive oil until golden.
  • Add white wine, scraping to loosen any brown bits in the pan.
  • Add tomatoes, honey, and salt and pepper to taste. Bring to a simmer.
  • Return rabbit to pot. Cover, and cook for 45 minutes, or until the rabbit is tender.
  • Remove rabbit pieces, and boil the sauce until reduced and thickened.
  • Return rabbit to the pot to heat through.
  • Serve with sauce.

    This was really fabulous. The mix of honey and rosemary made the tomatoes wonderful. I cooked up a little spaghetti so I could really enjoy them. Made it exactly as written except I minced my garlic. I added a picture and a bit more in IMI. 7/27/14

    Yum I love bunny! They can be hard to find at the butcher here in the US, but will definitly find one for this recipe.
