Rabbit In Tomato Sauce Recipe
Lean and flavorful, rabbit is a very popular meat in Europe. Substitute chicken if rabbit is unavailable.

Ingredients
  • 1 rabbit, skinned, cleaned, and cut into 8 pieces
  • 4 Tbsp olive oil
  • 4 garlic cloves
  • 1 Tbsp fresh rosemary
  • 1 C white wine
  • 1 16 oz can of diced tomatoes
  • 2 Tbsp honey
  • salt and pepper to taste

Directions
  1. In a large, deep skillet or a Dutch oven, heat 2 Tbsp olive oil.
  2. Season the rabbit pieces with salt and pepper.
  3. Brown the rabbit in batches, adding 1 Tbsp of additional oil as necessary. Remove the pieces to a plate as the rabbit is browned.
  4. Slice garlic. Saute with rosemary in 1 Tbsp olive oil until golden.
  5. Add white wine, scraping to loosen any brown bits in the pan.
  6. Add tomatoes, honey, and salt and pepper to taste. Bring to a simmer.
  7. Return rabbit to pot. Cover, and cook for 45 minutes, or until the rabbit is tender.
  8. Remove rabbit pieces, and boil the sauce until reduced and thickened.
  9. Return rabbit to the pot to heat through.
  10. Serve with sauce.

Yum I love bunny! They can be hard to find at the butcher here in the US, but will definitly find one for this recipe.
