Crab Meat Puffs Recipe
Momma's crab puff recipe, a cocktail party must. I can't count how many of these we made together for celebrations and showers. So good.

Ingredients
  • 1 can of refrigerated crab meat, 6 1/2 ounces, drained and picked over for shells
  • 1/2 cup of grated extra sharp white cheddar
  • 3 green onions, chopped white and tender green only
  • 1 teaspoon of Worchestershire
  • 1 teaspoon of dry mustard (Colman's)
  • 1 cup water
  • 1 stick of butter
  • 1/4 tsp of salt
  • 1 cup of flour
  • 4 large eggs

Directions
  1. Preheat oven to 400 degrees.
  2. Combine first five ingredients ina bowl.
  3. Combine water, butter and salt in a saucepan.
  4. Bring to boil.
  5. Remove from heat, add flour and beat until it forms a ball.
  6. Add eggs one at a time.
  7. Beat well after each addition.
  8. Blend in crab mixture.
  9. Scoop by tablespoon (about a golf ball size) onto parchment lined cookie sheets.
  10. Bake for 10 minutes, then reduce the heat to 350 degrees and cook for ten minutes more until golden brown.

I'm surprised that you didn't add any seasoned bread crumbs, as I did and they were delictable.I deep fried for about 3 minutes until crisp. Followed your recipe and added a twist and came up with a winner, thanks!
