This is a carrot salad with a surprise! The shoestring potato chips add the surprising crunch and saltiness to this otherwise bland recipe. Great for a buffet salad, easy, quick and cheap!

Ingredients
- 2 lbs of fresh carrots, shredded
- 1 cup diced celery
- 1 cup chopped green onions
- 1/2 to 1 cup of mayonnaise (to taste)
Directions
- Mix the above ingredients together and refrigerate until serving.
- At serving time, mix in a bag of shoestring potato chips and enjoy.
