You can use any cutlet for this recipe, except perhaps beef. If you eat veal it is delicious, but I usually use turkey or chicken and sometimes even pork cutlets.

Ingredients
  • 4 boneless cutlets
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 c. flour
  • 3 tbsp. oil
  • 10 oz. beef broth
  • 1/2 c. sherry
  • 2 c. fresh, sliced or 10 oz. can sliced mushrooms
  • 2 tbsp. parsley (optional)

Directions
  1. Season cutlets with salt and pepper and coat with flour.
  2. Heat oil in large skillet and brown cutlets, 4 minutes each side.
  3. Remove from skillet and add broth, sherry, mushrooms and parsley. Bring to a boil scraping sides and bottom with spatula.
  4. Return cutlets to skillet. Cover and simmer 20 minutes, basting cutlets occasionally with juice.
