Easy chicken breasts stuffed with roasted capsicum ricotta rocket and pinenuts

- 4 chicken breasts, skin on shopping list
- 1 bunch rocket shopping list
- 400g fresh ricotta shopping list
- 1 large roasted capsicum shopping list
- 50g pine nuts shopping list
- 1 teaspoon minced garlic shopping list
- 300ml chicken stock shopping list
- butter shopping list
- salt and pepper, to taste shopping list
How to make it
- Preheat oven to 200°C.
- Combine rocket, pine nuts, garlic, capsicum, ricotta. Stuff chicken breasts with mixture (if chicken breasts are thick, cut an extra pocket in the side and stuff that too).
- Place in oven proof dish; pour stock into dish and top chicken breasts with a small knob of butter, and season with salt and pepper. Bake for 30 minutes or until cooked.
