Easy Chicken Breasts Stuffed With Roasted Capsicum Ricotta Rocket And Pinenuts Recipe

Ingredients
  • 4 chicken breasts, skin on
  • 1 bunch rocket
  • 400g fresh ricotta
  • 1 large roasted capsicum
  • 50g pine nuts
  • 1 teaspoon minced garlic
  • 300ml chicken stock
  • butter
  • salt and pepper, to taste

Directions
  1. Preheat oven to 200°C.
  2. Combine rocket, pine nuts, garlic, capsicum, ricotta. Stuff chicken breasts with mixture (if chicken breasts are thick, cut an extra pocket in the side and stuff that too).
  3. Place in oven proof dish; pour stock into dish and top chicken breasts with a small knob of butter, and season with salt and pepper. Bake for 30 minutes or until cooked.
