One of my friends baked this wonderful cake…. It is fluffy, ponge and you can use your favorite topping…. Very easy to prepare

Ingredients
- 4 eggs
- 2 cup sugar
- 2 tsp, vanilla
- 2 cup flour
- 2 tsp. Baking powder
- 1/2 tsp. salt
- 1 cup milk
- 2 Ttbsp. Margarina
- Coconut Topping
- ½ cup brown sugar
- 1/3 cup butter margarine
- ¼ cup milk or cream
- ½ cup chopped nuts
- 1 cup shreded coconut
Directions
- In mixing bowl, beat well eggs and add sugar and vanilla, et aside
- Combine separately flour, baking powder and salt.
- With a rubber spatula Fol. Dry ingredients into eggmixture.
- In a small aucepan boil milk and margarine… then add slowly to batter, stirring gently . Pour into well greased and floured 7 x 12 “or 9x9” cake pan. Bake 30 – 35 minutes
- Coconut Topping
- Combineall ingredientsand spread on cake and broil fr 2 – 4 minutes until brown.

Wonderful topping recipe!
Suggest you melt the butter separately and add to the hot milk then add about a tsp of vanilla. Make sure the milk mixture is hot (but not boiling) when you add to the batter.
