Tuscan Fried Chicken Pollo Fritto Recipe
My Nonna made this chicken for me a lot when I was a little girl. She's still here at 99!!!!!!!! This is great with a green salad and a simple risotto

Ingredients
  • 4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 2 cloves minced garlic
  • juice of 1 lemon
  • 2 eggs
  • flour to coat
  • olive oil for frying
  • salt and pepper
  • Lemon wedges

Directions
  1. Beat together with a fork, olive oil, garlic and lemon
  2. Marinate chicken for 1 hour turning several times to coat
  3. Heat 1 inch of olive oil in a skillet to 375 degrees
  4. Beat eggs well adding salt and papper
  5. Remove chicken from marinade and pat dry
  6. Dredge lightly in flour
  7. Dip in egg
  8. Slip into hot oil and cook until well browned on both sides
  9. Drain on paper towels
  10. Serve with lemon wedges
