Tuscan Fried Chicken Pollo Fritto

- 4 boneless skinless chicken breasts shopping list
- 2 tbsp olive oil shopping list
- 2 cloves minced garlic shopping list
- juice of 1 lemon shopping list
- 2 eggs shopping list
- flour to coat shopping list
- olive oil for frying shopping list
- salt and pepper shopping list
- lemon wedges shopping list
How to make it
- Beat together with a fork, olive oil, garlic and lemon
- Marinate chicken for 1 hour turning several times to coat
- Heat 1 inch of olive oil in a skillet to 375 degrees
- Beat eggs well adding salt and papper
- Remove chicken from marinade and pat dry
- Dredge lightly in flour
- Dip in egg
- Slip into hot oil and cook until well browned on both sides
- Drain on paper towels
- Serve with lemon wedges
