Greek Chicken and Potatoes

- 2 Tbl. olive oil shopping list
- 1 large onion chopped shopping list
- 2 Tbl. dried thyme shopping list
- 1 1/2 tsp. fresh ground pepper shopping list
- 1/2 tsp. kosher salt shopping list
- 6-8 cloves of garlic, finely chopped shopping list
- 6 cups cubed red potatoes shopping list
- 2 cups cut green beans (about 1/2 lb) shopping list
- 1/4 cup sliced olives shopping list
- 2 (15 oz ) cans diced tomatoes ( undrained) shopping list
- 8 boneless, skinless chicken thighs or 4 boneless, skinless chicken breasts shopping list
- 1/2 cup crumbled feta cheese shopping list
How to make it
- Preheat oven to 375 degrees
- Heat oil in a large skillet of medium high heat. Add onion and saute for 3 minutes. Add thyme, pepper, salt and garlic, saute for an additional minute.
- Increase heat to medium high and add potatoes, saute for approx. 8 minutes or until potatoes begin to brown.
- Stir in beans, olives and tomatoes and heat through.
- Transfer to an oven proof casserole dish, add chicken to vegetables and top with feta cheese.
- Cover and bake for 45-50 minutes or until potatoes are tender and chicken is cooked through.
- Serve

I tried this last night and it was REALLY good! My husband usually does not like dark meat, but he said this was a definate repeater. The only issue I had was that the type of olive was not specified, so I used both.
