Greek Chicken And Potatoes Recipe
This is an tasty and easy chicken dish to prepare. It is made with the help of garlic, thyme and feta cheese. It is a variation of a Cooking Light recipe.

Ingredients
  • 2 Tbl. olive oil
  • 1 large onion chopped
  • 2 Tbl. dried thyme
  • 1 1/2 tsp. fresh ground pepper
  • 1/2 tsp. kosher salt
  • 6-8 cloves of garlic, finely chopped
  • 6 cups cubed red potatoes
  • 2 cups cut green beans (about 1/2 lb)
  • 1/4 cup sliced olives
  • 2 (15 oz ) cans diced tomatoes ( undrained)
  • 8 boneless, skinless chicken thighs or 4 boneless, skinless chicken breasts
  • 1/2 cup crumbled feta cheese

Directions
  1. Preheat oven to 375 degrees
  2. Heat oil in a large skillet of medium high heat. Add onion and saute for 3 minutes. Add thyme, pepper, salt and garlic, saute for an additional minute.
  3. Increase heat to medium high and add potatoes, saute for approx. 8 minutes or until potatoes begin to brown.
  4. Stir in beans, olives and tomatoes and heat through.
  5. Transfer to an oven proof casserole dish, add chicken to vegetables and top with feta cheese.
  6. Cover and bake for 45-50 minutes or until potatoes are tender and chicken is cooked through.
  7. Serve
