Pineapple Sheet Cake Recipe

Ingredients

2 cups flour

1 1/2 cups sugar

2 tsp baking soda

2 eggs

2 cups crushed pineapple with juice

1/2 cup brown sugar

1 cup chopped pecans, optional

GLAZE

3/4 cup margarine

3/4 cup sugar

1/3 cup evaporated milk

Directions

Preheat oven to 350 degrees. Grease a large cookie sheet. 11x17

Mix eggs and 1 1/2 cups of sugar

Add flour, baking soda and pineapple

Mix well and pour into pan

Sprinkle brown sugar over top

Bake 20-25 minutes

Remove from oven, poke with fork all over and pour glaze on top

Let cool and cut into bars

GLAZE

Combine all ingredients in saucepan

Boil for 2-3 minutes stirring constantly and pour over cake

No there's not! It doesn't affect taste or texture and I think it's because of the pineapple.

This is too funny. I just made a pineapple cake on Sunday.I hunted high and low for a good recipe using fresh not canned pineapple.Wish I would of found your recipe first! Eggs and sugar with the dry ingredients are just enough to have a perfect texture for this one..You are right.The juice of the pineapple makes it more tender than normal sponge cake texture.This is a masterpiece.Thanks Michelle.
