How to make it

  • Preheat oven to 350 degrees. Grease a large cookie sheet. 11x17
  • Mix eggs and 1 1/2 cups of sugar
  • Add flour, baking soda and pineapple
  • Mix well and pour into pan
  • Sprinkle brown sugar over top
  • Bake 20-25 minutes
  • Remove from oven, poke with fork all over and pour glaze on top
  • Let cool and cut into bars
  • GLAZE
  • Combine all ingredients in saucepan
  • Boil for 2-3 minutes stirring constantly and pour over cake

    This recipe looks delicious! I LOVE pineapple and I am bookmarking this recipe for warmer weather. Hmmm, on second thought, if I bake this cake now it might just help to trick the brain into thinking that the warmer weather has arrived LOL Thank you for sharing and for the recipe buddy invitation.

    Eggs and sugar with the dry ingredients are just enough to have a perfect texture for this one..You are right.The juice of the pineapple makes it more tender than normal sponge cake texture.This is a masterpiece.Thanks Michelle.

    This is too funny. I just made a pineapple cake on Sunday.I hunted high and low for a good recipe using fresh not canned pineapple.Wish I would of found your recipe first! I get lots of pineapple from my daughter who works at a fruit basket delivery store. Will be trying this recipe next time! Thanks for the post.

    No there's not! It doesn't affect taste or texture and I think it's because of the pineapple.
