Salmon Cakes

- 1 pound cooked fresh salmon or canned salmon shopping list
- T butter shopping list
- 1/4 cup finely chopped onion shopping list
- 2 tsp finely minced green pepper shopping list
- 1/2 cup finely minced celery shopping list
- 3/4 cup bread crumbs shopping list
- 1/4 cup finely chopped parsley shopping list
- 2 eggs, lightly beaten shopping list
- salt and ground black pepper to taste shopping list
How to make it
- Flake the salmon in a bowl.
- Heat tablespoon of butter in a pan.
- Add the onion, celery and green pepper and cook until tender.
- Onion should be transparent.
- Cool mixture slightly and then add to salmon.
- Add the bread crumbs, parsley, eggs, salt, and pepper.
- Shape into 4 cakes.
- Chill for about 30 minutes.
- Heat some olive oil which should just be enough to cover bottom of a frying pan.
- Add the salmon cakes and cook until brown on both sides.
- Serve garnished with lemon wedges.
- Also recommend tartar sauce on the side.

These are good, I make mine the same way but use cracker crumbs instead of bread crumbs. Great post. Got my 5

My hubby's going to love these too...Now, if I could just reach into that picture and borrow some of your Colman's Tartar...(we can get the mustard, of course, but not the rest of the line...LOL!)
