How to make it

  • Dust cheese slices in flour, shaking off excess. Heat oil in a frying pan until a bread cube sizzles as soon as it is added.
  • Fry cheese in batches until golden both sides. Drain on crumpled kitchen paper.
  • Serve, while still hot, on a bed of combined spinach leaves, avocado and basil. Drizzle liberally with combined olive oil, juice and pepper. Serve immediately with lime wedges.
  • Note: Haloumi cheese slices can also be oiled and grilled or barbecued. They are great on toast.
