Ingredients
  • 1/2 lb halloumi, thickly sliced
  • 1/4 cup seasoned flour
  • oil for shallow frying
  • 1 cup baby spinach leaves
  • 1 avocado, seeded, peeled and sliced
  • 1/4 cup basil
  • juice of 1 lemon
  • 1/4 cup olive oil
  • black pepper, freshly ground
  • wedges of lime

Directions
  1. Dust cheese slices in flour, shaking off excess. Heat oil in a frying pan until a bread cube sizzles as soon as it is added.
  2. Fry cheese in batches until golden both sides. Drain on crumpled kitchen paper.
  3. Serve, while still hot, on a bed of combined spinach leaves, avocado and basil. Drizzle liberally with combined olive oil, juice and pepper. Serve immediately with lime wedges.
  4. Note: Haloumi cheese slices can also be oiled and grilled or barbecued. They are great on toast.
