Fried Haloumi Lemon Dressing

- 1/2 lb halloumi, thickly sliced shopping list
- 1/4 cup seasoned flour shopping list
- oil for shallow frying shopping list
- 1 cup baby spinach leaves shopping list
- 1 avocado, seeded, peeled and sliced shopping list
- 1/4 cup basil shopping list
- juice of 1 lemon shopping list
- 1/4 cup olive oil shopping list
- black pepper, freshly ground shopping list
- wedges of lime shopping list
How to make it
- Dust cheese slices in flour, shaking off excess. Heat oil in a frying pan until a bread cube sizzles as soon as it is added.
- Fry cheese in batches until golden both sides. Drain on crumpled kitchen paper.
- Serve, while still hot, on a bed of combined spinach leaves, avocado and basil. Drizzle liberally with combined olive oil, juice and pepper. Serve immediately with lime wedges.
- Note: Haloumi cheese slices can also be oiled and grilled or barbecued. They are great on toast.
