How to make it

  • Heat oil in a large skillet over med. heat.
  • Add beef and saute 3 minutes, add onions and continue to cook until beef is brown, stirring frequently, about 5 minutes, drain
  • Transfer beef mixture to slow cooker.
  • Add salsa, corn, jalapeno, chili powder and garlic, stir to combine.
  • Cover slow cooker, cook on low heat for 3 hours or until beef is tender and mixture is heated through.
  • Place tortilla chips on a large serving plate.Spoon beef mixture over tortilla chips, top with cheese and any topping of your choice.
  • NOTE, Topping suggestions: chopped tomatoes, scallions,olives, avocados, guacamole, sour cream and green onons
