Spicy Beef Nachos

- 1 tsp. olive oil shopping list
- 1 lb. beef sirloin tips shopping list
- 1 cup onion, dice shopping list
- 2 cups salsa shopping list
- 1 cup corn, frozen or can shopping list
- 1 Tbsp. jalapeno pepper, minced shopping list
- 1 tsp. chili powder shopping list
- 1 clove garlic, minced shopping list
- 10 oz. tortilla chips shopping list
- 1 cup shredded cheddar cheese shopping list
How to make it
- Heat oil in a large skillet over med. heat.
- Add beef and saute 3 minutes, add onions and continue to cook until beef is brown, stirring frequently, about 5 minutes, drain
- Transfer beef mixture to slow cooker.
- Add salsa, corn, jalapeno, chili powder and garlic, stir to combine.
- Cover slow cooker, cook on low heat for 3 hours or until beef is tender and mixture is heated through.
- Place tortilla chips on a large serving plate.Spoon beef mixture over tortilla chips, top with cheese and any topping of your choice.
- NOTE, Topping suggestions: chopped tomatoes, scallions,olives, avocados, guacamole, sour cream and green onons
