It's plain flour that has been browned. I have posted the recipe for it. It saves on fat and calories. And thanks for the comments

Put two cups of plain flour in a heavy pan, put the heat to medium and stir constantly with a whisk until it turns a caramel color. It takes about 20 mins. Then you put about 1/2 cup of the dry roux and add a little water at a time to make it to the roux consistency.

This reminds me of a dish I make. I saute the smoked sausages, cubed potatoes and onions until barely browned, cover & cook until the potatoes are done. Remove cover and finish browning. I could eat the whole pan full.
