Ingredients

How to make it

  • In a large bowl toss the chicken pieces with all of the ingredients.
  • The salt depends on your taste.
  • Let the chicken sit for 15 minutes while the coals in your grill are heating up.
  • You need a grill with a cover, preferably a Webber.
  • Once your coals are hot, push them to one side of the grill and place the chicken pieces on the other side so no pieces are directly over the coals.
  • Place the cover on the grill and open the vent holes about 3/4 of the way.
  • Within 45 Minutes your chicken should turn a golden brown and ready to devour with your favorite dishes. If your coals are really hot, it may be done within 30 minutes.

I got out the grill (albeit propane) and used this recipe this weekend. The olive oil made a nice crispy skin! Very good. Thank you!
