Easy Rice Pudding Recipe

Easy Rice Pudding Recipe
This pudding is SO EASY. You just need to have some patience! We love Kozy Shack rice pudding here, and this is what I came up with after tweaking a few recipes. I prefer to not use eggs, as I tend to screw up when I add them (they cook all funny). ... More

Ingredients
  • 4.5 cups milk (I use 1%)
  • 1/3 cup sugar
  • 3/4 cup cooked rice (a great way to use leftover rice! We use Jasmine Rice)
  • 1 tsp vanilla
  • 1/4 cup custard powder

Directions
  1. Bring milk and sugar to rolling boil in medium-large saucepan.
  2. add rice and custard powder and turn heat to low.
  3. HERE is where you need patience. Keep boiling on low for 30 minutes!
  4. After 30 minutes, i normally turn it up to high again and rapidly boil the mixture for an added 5 minutes or so, but it is not necessary.
  5. Let sit for 5-10 minutes and serve.
  6. This is delicious hot or cold!!

I love Kozy Shack too, my son loves the rice pudding, I love the chocolate, no sugar added. Also Jasmine rice is our favorite too, but we use a brown jasmine rice. Also will have to use rice milk, or almond milk which do you think would fit better.

I love this recipe I am a big fan of Almond Milk in rice pudding to keep it dairy free, the recipe already has rice and the sweet nutty flavor of the almonds enhances the flavor.
