This is a simple yet tasty royal icing for my Best Ever Sugar Cookies. I found this recipe to be the best flavor for the sugar cookies. It is a Martha Stewart recipe and if made with very fresh ingredients, it can't be beat.

- 1 cup comfectoners` sugar
- 1 egg white
- 3 - 4 drops of freshly squeezed lemon juice
- food coloring

Ingredients

1 cup comfectoners` sugar shopping list
1 egg white shopping list
3 - 4 drops of freshly squeezed lemon juice shopping list
food coloring shopping list

How to make it

Mix the sugar, egg white and lemon juice in a small bowl until smooth and creamy.
It should have the consistancy of heavy cream (you may need to add a bit more sugar).
Add desired food coloring.
Frost cookies
I like to decorate after with any buttercream frosting or sprinkles and edible doodads.
If you are concerned about egg safety, substitute dried egg whites.

How long does it take for the icing to be dry on frosted cookies?

I didn't make the sugar cookies, but I used this icing on some applesauce cookies. I found that I had to just about double the sugar in order to get it thick enough to stay on the cookies. Did I do something wrong? I'll note now that this is my first time making icing like this. Overall it was really yummy and easy to make. My cookies looked spectacular! I'll definitely do this one again :)
