Apricot Lemon Coffeecake

- 15 ounce can apricot halves drained and juice reserved shopping list
- 1-1/4 cup all -purpose flour shopping list
- 1/2 cup granulated sugar shopping list
- 1/2 cup butter softened 1/2 cup sour cream shopping list
- 2 eggs shopping list
- 1 teaspoon baking powder shopping list
- 1 teaspoon grated lemon peel shopping list
- 1/3 cup granulated sugar shopping list
- 2 tablespoons butter shopping list
- 2 tablespoons all purpose flour shopping list
- 1 teaspoon grated lemon peel shopping list
- 1/2 cup powdered sugar shopping list
- 1 tablespoon reserved apricot juice shopping list
How to make it
- Heat oven to 350.
- Pat apricots dry with paper towels then cut into slices and set aside.
- Combine flour, sugar, butter, sour cream, eggs, baking powder and lemon peel.
- Beat at low speed scraping bowl often until well mixed about 2 minutes.
- Spread into greased square baking pan.
- Stir together 1/3 cup sugar, butter, flour and lemon peel until crumbly.
- Arrange apricots over batter then spoon crumbly mixture over apricots.
- Bake 45 minutes.
- Stir together powdered sugar and enough reserved apricot juice for desired glazing consistency.
- Drizzle glaze over warm coffeecake.

Cat.. can you tell I love coffeecakes....this takes me back a few years... alot of memories when my mom used to smell up the kitchen with her coffeecakes... we would sit and have coffee...Great memories.....and Great Post!!!
