Tostada Salad With Feta Cheese Recipe

Love this salad...great with southwestern soups, or as a meal! Feta ceese, lime, and 2 types of tobasco kick it up a notch! Cook time is for tortillas.

Ingredients
- 1 T olive oil
- 2 t Tobasco Pepper Sauce
- 6 corn (or flour) tortillas
- 1 (15 oz) can black beans, drained and rinsed
- 1 T juice from a lime
- 1 T Tobasco Green Pepper Sauce
- 1 t cumin
- 1 t oregano
- 1/4 t salt
- 2 c shredded romaine lettuce
- 1 medium tomatoes, chopped
- 1/2 c crumbled feta cheese
- 3 large green onions, thinly sliced
- Sour cream
Directions
- Preheat oven to 350
- Comine the olive oil and Tobasco sauce in a cup
- Brush mixture on one side of tortillas; place on a cookie sheet
- Bake for 10 minutes or until tortillas are golden
- Combine black beans, lime jucie, Green Tobasco, cumin, oregano and salt in a medium bowl
- Place one tortilla on each plate
- Top wtih 1/6 of the bean mixture, lettuce, tomatoes, feta cheese and green onions
- Repeat with remaining tortillas and salad mixutre
- Top each with a dollop of sour cream
