- salad: shopping list
- 1 large ripe tomato, cut into 1 inch pieces shopping list
- 1 small cucumber, halved, seeded and cut shopping list
- 1 red bell pepper, seeded cut into 1 inch pieces shopping list
- 1 yellow bell pepper, seeded cut into 1 inch pieces shopping list
- 1/2 red onion, halved and thinly sliced shopping list
- 10 large basil leaves, sliced nto thin strips shopping list
- 1 bag lettuce shopping list
- Croutons: shopping list
- 2 tbsp extra virgin olive oil shopping list
- 1/2 small loaf French bread, cut into 1 inch cubes shopping list
- vinaigrette shopping list
- 1/2 small garlic clove, mashed to a paste or minced shopping list
- 2 tbsp red wine vinegar shopping list
- 5 tbsp extra virgin olive oil shopping list
- kosher salt and freshly ground pepper shopping list
How to make it
- for salad: in large bowl, toss together the tomato, cucumber, peppers, onion, basil and lettuce. Add the croutons and vinaigrette to taste. Toss gently. Set aside to allow croutons to soak up the vinaigrette, 10 to 20 minutes.
- For Croutons: In large pan over medium heat, warm oil. Add the bread and cook, stirring as needed, until golden brown, about 4 minutes. Using a slotted spoon transfer croutons to a paper towel lined plate to drain. cool to room temp.
- For Vinaigrette: in a small bowl whisk garlic and vinegar. Slowly add the oil in a steady stream, whicking to emulsify. Season with salt and pepper.
