How to make it

  • Preheat broiler.
  • Wash and remove stems from spinach leaves. Chop the leaves into thin strips.
  • In medium bowl combine spinach leaves, water chestnuts, green onions, and 2 Tbls teriyaki sauce.
  • Trim fat from steak.
  • Score both sides of steak in a diamond pattern by making shallow diagonal cuts at 1 inch intervals.
  • Place steak between cut sheets of plastic wrap and working from center out with the flat part of meat mallet pound the steak into a 12/8 rectangle
  • Remove plastic wrap and lightly season with salt and pepper.
  • Spread the spinach mixture over the steak.
  • Start from long side and roll into a spiral.
  • Secure the spiral at 1 inch intervals starting a 1/2 inch from edge with wooden toothpicks.
  • Cut between the toothpicks into 10 pinwheels
  • Thread 2 pinwheels each onto 5 skewers and brush with some of the remaining teriyaki sauce.
  • Put skewers on rack of broiler pan and broil 3 to 4 inches from heat for 12 to 14 min turning once during cooking and brush with teriyaki sauce upon turning.
  • 12 to 14 minutes will get it to medium doneness.
  • If any teriyaki sauce left over discard it.
  • Remove from skewers and remove toothpicks
  • Enjoy
  • Per serving: 175 calories, 8 grm fat, 56 mg chol, 3 meat exchanges.

    Besides being a great meat entree for a dinner, this would be great with a tray of stuff for TV munching ... like veggies and dip .... salsa and scoops.
