Teriyaki Beef Spirals Recipe
A healthy tasty main dish beef meal that is very pleasing to the eye. It sounds complicated but isn't really and the taste is outstanding.

Ingredients
  • 1 cup loosely packed fresh spinach leaves
  • 1/2 cup finely chopped water chestmuts
  • 1/4 cup thinly sliced green onions
  • 1/4 cup lower sodium teriyaki sauce
  • 1 1and1/4 lb flank steak
  • salt
  • pepper

Directions
  1. Preheat broiler.
  2. Wash and remove stems from spinach leaves. Chop the leaves into thin strips.
  3. In medium bowl combine spinach leaves, water chestnuts, green onions, and 2 Tbls teriyaki sauce.
  4. Trim fat from steak.
  5. Score both sides of steak in a diamond pattern by making shallow diagonal cuts at 1 inch intervals.
  6. Place steak between cut sheets of plastic wrap and working from center out with the flat part of meat mallet pound the steak into a 12/8 rectangle
  7. Remove plastic wrap and lightly season with salt and pepper.
  8. Spread the spinach mixture over the steak.
  9. Start from long side and roll into a spiral.
  10. Secure the spiral at 1 inch intervals starting a 1/2 inch from edge with wooden toothpicks.
  11. Cut between the toothpicks into 10 pinwheels
  12. Thread 2 pinwheels each onto 5 skewers and brush with some of the remaining teriyaki sauce.
  13. Put skewers on rack of broiler pan and broil 3 to 4 inches from heat for 12 to 14 min turning once during cooking and brush with teriyaki sauce upon turning.
  14. 12 to 14 minutes will get it to medium doneness.
  15. If any teriyaki sauce left over discard it.
  16. Remove from skewers and remove toothpicks
  17. Enjoy
  18. Per serving: 175 calories, 8 grm fat, 56 mg chol, 3 meat exchanges.

Besides being a great meat entree for a dinner, this would be great with a tray of stuff for TV munching ... like veggies and dip .... salsa and scoops.
